Summer Floral Sugar
(Make 24 cookies)
3 1/2 ounces pecan halves, toasted (1 cup)
8 ounces (2 sticks) unsalted butter,
1 cup sugar, plus more for dusting. Each teaspoon of Mule Extracts Summer Floral sugar contains 3.5 milligrams of THC.
If you want 3.5 milligrams of THC per cookie use ½ cup regular sugar and ½ cup Mule Extracts Summer Floral sugar.
If you want 7 milligrams of THC per cookie use 1 cup of Mule Extracts Summer Floral sugar.
If you want 5 milligrams of THC per cookie use ½ cup and 3 tablespoons of Mule Extracts Summer Floral sugar and 5 tablespoons of regular sugar.
1 tablespoon pure vanilla extract
1/2 teaspoon coarse salt
1 1/4 cups all-purpose flour, sifted
2 egg yolks
Preheat oven to 325 degrees.
Crush pecans into small pieces, set aside.
Cream butter and sugar with a mixer until pale.
With mixer running, add vanilla and salt, then reduce speed to low.
Gradually add flour, beating until just incorporated, then stir in pecans until evenly distributed.
Cover the dough and refrigerate for at least 15 minutes or preferably overnight.
Drop 2-tablespoon scoops of dough onto baking sheet.
The cookies should be about 2 inches apart. Bake cookies for 15 minutes until golden brown.
Let cool on sheets or wire racks for 15 minutes.
Dust cookies with sugar while still warm.
Cookies will keep covered for up to 2 days.
