Important information


The following recipe makes either 16, 5 milligram(mg) cookies or 16, 10 mg cookies.  The difference is whether or not you use Mule Extracts’ sugar for the sanding sugar.  As a reference point each teaspoon of Mule Extracts’ sugar (4.2 grams, 1 scoop in bag) equals 5 mg of THC.  In order to vary the THC content, mix plain sugar with Mule Extracts’ sugar.



Ingredients / Cookie Dough


11 tablespoons (1 Stick + 3 tablespoons) good (Kerry Gold) unsalted butter. 
The butter should be very soft, ready for whipping.  The consistency should be like hand cream

8 ounces (2 sticks) unsalted butter,

1/3 cup (16 teaspoons, 1 package + 6 scoops) Mule Extracts’ Fall Fruit sugar. 
If you want 2.5 mg per cookie use 8 teaspoons Mule Extracts’ Fall Fruit and 8 teaspoons (1/6 cup) regular sugar

1 tablespoon orange zest

½ teaspoon flaky sea salt

1 cups all-purpose flour

1 teaspoon freshly ground ginger

¼ cup finely ground crystallized ginger



Instructions


Use an electric mixer to beat butter and 1 teaspoon freshly ground ginger on medium speed until soft and whipped, 2-3 minutes.

Add 1 tablespoon orange zest to sugar and mix well.

Add sugar to butter and continue beating until well incorporated, about 1 minute.

Add flaky sea salt and beat briefly to combine.

Combine flour and ¼ cup of crystallized ginger and then add the combination to the butter and beat until almost all flour disappears into dough. (Dough should be moist but crumbly.)

Use a rubber spatula to give dough a few final stirs, scraping up from bottom to incorporate any butter or dry bits in bottom of bowl.

Use a rubber spatula to scrape one-third of dough onto a sheet of plastic wrap.
Fold plastic wrap over dough and gently roll to form a 6-inch-long log, twisting ends to pull plastic wrap taut and help dough hold its shape. Repeat with remaining dough to form two more logs.
